Frosted Lemon Rolls

We recreated Ginny Dyer’s Lemon Rolls using our Summerhill Goat Milk. This recipe is the perfect recipe for spring with its bright lemon flavor! 

Ingredients for the Lemon Rolls

  • 1 ¼ cups (300 ml) whole milk
  • 2 ¼ teaspoon active dry yeast
  • 1 teaspoon granulated white sugar (to bloom the yeast)
  • 4 ¾ cups (593 g) all-purpose flour, spooned and leveled
  • 1 ½ teaspoon salt
  • 2 tablespoon (25 g) granulated white sugar
  • 2 eggs, whisked
  • ½ cup (112 g) unsalted butter, very softened
  • ½ tablespoon vanilla
  • 2 tablespoon (20 g) lemon zest (about 2 lemons zested)

Ingredients for the Lemon Filling

  • ½ cup (112 g) unsalted butter, very softened
  • ½ cup (110 g) brown sugar
  • ½ cup (100 g) granulated white sugar
  • 2 tablespoon (20 g) lemon zest (about 2 lemons zested)
  • 2 tablespoon (30 ml) fresh lemon juice
  • ¼ teaspoon salt
  • ¼ cup (60 ml) heavy cream (for pouring in between the rolls)

Ingredients for the Lemon Cream Cheese Frosting

  • ¼ cup (56 g) unsalted butter, softened
  • 4 oz (113 g) cream cheese, cold
  • ¾ cup (97 g) powdered sugar
  • ½ tablespoon (5 g) lemon zest (about ½ lemon zested)
  • ½ tablespoon fresh lemon juice

Frosted Sugar Cookie Bars

These delicious frosted sugar cookie bars pair perfectly with a mid-morning coffee or afternoon cup of tea! The Summerhill Goat Milk-filled buttercream frosting is the perfect highlight for this delicious treat.

Ingredients for Bars

 

  • 1 cup butter, softened

  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 eggs
  • 2 tsp vanilla
  • 4 1/4 cups all purpose flour
  • 1 tsp cream of tartar
  • 1 tsp baking soda
  • 1/4 tsp salt

Ingredients for Frosting

  • 1 cup softened butter
  • 1/4 cup Summerhill goat milk (or less depending on desired consistency)
  • 5 cups powdered sugar
  • 1 tsp vanilla

 

 

 

 

How to Make It

Bars:

-Preheat oven to 350 F and grease a 9×13 cake pan.

-Mix together your butter, sugar, and powdered sugar.

-Add in your eggs and vanilla until combined.

-In a separate bowl mix together the rest of your dry ingredients.

-Slowly add in your dry ingredients to your wet ingredients until combined. **Note you can always add another 1/4 cup flour if you think your dough is too sticky.

-Place your dough into your greased pan and press down the dough with parchment paper to keep it from sticking to your hands.

-Place in the oven for 20 minutes, until the edges start to turn a golden color.

-Let the bars cool completely before frosting them.

 

Buttercream:

-Blend butter, powdered sugar, and butter together.

-Slowly add in your goat milk until you’ve reached your desired consistency.

-Pour icing on top of cooled bars and spread evenly.

-You can add sprinkles or food coloring to the frosting for any occasion!

-Slice and ENJOY!
