Cranberry Orange Scones with Goat Milk

Pull out your teapot and have a cozy morning at home with our cranberry orange scones with Summerhill Goat Milk! These sweet and tart treats are fun for the whole family.

Ingredients

·         2 cups all-purpose flour

·         3 Tbsp granulated sugar

·         1/2 tsp salt

·         1 Tbsp baking powder

·         1 large egg

·         1/2 cup butter cold. cut into chunks

·         1/2 Tbsp orange zest + more for glaze

·         3/4 cup cranberries

·         2/3 cup powdered sugar

·         2 Tbsp fresh orange juice

·         1/2 cup goat milk + 2 Tbsp for brushing on top

How to Make It

1.Preheat oven to 400 degrees, and line a baking sheet with parchment paper. 

2. In a large bowl sift together your flour, granulated sugar, baking powder, salt, and add in your zest.

2. Add in your chopped up cold butter and using a pastry cutter or two knives, cut the butter into the mixture until you have a crumbly mixture (don’t over mix).

3.Toss in your 3/4 cup dried cranberries and gently stir to combine. Set aside.

4. In a small bowl mix together your milk and egg. Pour the mixture over your dry ingredients and fold together until a dough is formed. It will be crumbly.

5. Place dough onto a generously floured surface and form into a round disk, about 1 inch thick. Cut the disk into 12 equal slices and brush the tops of the scones with your extra goat milk.

6. Place on your lined baking sheet and place in the oven for about 15 minutes (just until they are a golden color).

 

7. Remove scones from the oven and mix together your orange icing. In a small bowl mix your powdered sugar and fresh squeezed orange juice, add more juice depending on your desired consistency. Drizzle over your scones and ENJOY!
