Delectable Strawberry Tart

Swing by your local strawberry stand to top off this delectable strawberry tart made with Summerhill Goat Milk! With a homemade crust, custard, and glaze, this pastry is the perfect accompaniment to your next dinner or coffee break.

Ingredients for Tart Crust

  • 1 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup + 2 tbsp all purpose flour
  • 1/2 tsp salt

Ingredients for Custard

  • 1 1/2 cups Summerhill Goat Milk
  • 4 Large egg yolks
  • 1 1/2 tsp vanilla extract
  • 1/2 cup granulated sugar
  • 3 tbsp cornstarch
  • 1/2 tsp salt
  • 3 tbsp unsalted butter

Ingredients for Glaze

  • 1/4 cup strawberry jam
  • 3 tbsp water
  • 21/2-3 cups sliced strawberries (you can also add blueberries)
 
 

How to Make It

Tart

1.Preheat oven to 350°F. Prepare your 9 inch tart pan by
lightly greasing it with baking spray.(If doing a large tart pan, you can
double the Crust recipe if desired).

2. In a stand mixer with a paddle attachment, or a hand
mixer, mix all your crust ingredients together at once. The mixture will be
crumbly.

3.Transfer the dough into your prepared tart pan and pat it
down evenly, and up the sides of the pan. Use a fork to dock the dough all
over.

 

4. Bake your crust for about 30 minutes, until the crust is
cooked and a nice golden color on the edges. Let your crust cool completely.

Custard

1. In a medium saucepan over medium heat, whisk together your egg yolks, granulated sugar, cornstarch, and salt. Slowly add in 1/2 cup goat milk at a time, constantly whisking well after each addition until combined.

2. Cook your custard over medium heat, constantly whisking so the bottom doesn’t burn, until the custard begins to bubble and thicken (about 10-12 minutes).

3. Remove the custard from the heat and add in your 3 tbsp of butter, in 1 tbsp pats. Add in your vanilla and whisk them together until creamy. 

 

4. Pour your custard over your tart crust, place plastic wrap directly over the custard of the tart to prevent any skin from forming on top, and place in the oven for 4-5 hours to cool.

Strawberry Glaze

1. Before serving, prepare your strawberry glaze. In a small saucepan on low heat, stir together your strawberry jam and water until the jam loosens up. 

 

2. Arrange the strawberries on top of the custard and gently brush the strawberry jam over the strawberry slices. Remove the tart from the tart pan, cut into slices and ENJOY!

Sweet as Sugar Cookies for Valentine's Day

Sweeten up your Valentine’s Day with these heart-shaped iced sugar cookies made with Summerhill Goat Milk. Sure to be a fan-favorite with your significant other or your children!

Ingredients for Cookies

  • 1 cup butter
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3 cups all-purpose flour

Ingredients for Frosting

  • 1/2 cup butter, softened
  • 2 1/2  – 3 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-4 Tbsp. Summerhill Goat Milk
  • Food coloring, optional

How to Make It

-Preheat oven to 350° degrees.

-In a mixing bowl cream together your butter and sugar until smooth and fluffy, about 3 minutes.

-Beat in your vanilla and egg.

-In a separate bowl, mix your flour, baking powder, and salt together.

-Add your dry ingredients a little at a time until the dough is pulling away from the sides of your mixer.

-Do not chill the dough. Roll your dough out onto a floured surface and roll out to about 1/4 inch (You want this dough to be thicker).

-Cut with a heart shaped cookie cutter, or any desired shape.

-Bake for 6-8 minutes. Let cool on the baking sheet, until cool enough to transfer to a cooling rack.

 

-Once cookies are cooled, mix together your ingredients for your frosting.

-Start by mixing butter, powdered sugar, vanilla, and 2 Tbsp. goat milk. Add 1 Tbsp of goat milk at a time until you reach your desired consistency of frosting.

-Frost your cookies, and Enjoy!

Frosted Sugar Cookie Bars

These delicious frosted sugar cookie bars pair perfectly with a mid-morning coffee or afternoon cup of tea! The Summerhill Goat Milk-filled buttercream frosting is the perfect highlight for this delicious treat.

Ingredients for Bars

 

  • 1 cup butter, softened

  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 eggs
  • 2 tsp vanilla
  • 4 1/4 cups all purpose flour
  • 1 tsp cream of tartar
  • 1 tsp baking soda
  • 1/4 tsp salt

Ingredients for Frosting

  • 1 cup softened butter
  • 1/4 cup Summerhill goat milk (or less depending on desired consistency)
  • 5 cups powdered sugar
  • 1 tsp vanilla

 

 

 

 

How to Make It

Bars:

-Preheat oven to 350 F and grease a 9×13 cake pan.

-Mix together your butter, sugar, and powdered sugar.

-Add in your eggs and vanilla until combined.

-In a separate bowl mix together the rest of your dry ingredients.

-Slowly add in your dry ingredients to your wet ingredients until combined. **Note you can always add another 1/4 cup flour if you think your dough is too sticky.

-Place your dough into your greased pan and press down the dough with parchment paper to keep it from sticking to your hands.

-Place in the oven for 20 minutes, until the edges start to turn a golden color.

-Let the bars cool completely before frosting them.

 

Buttercream:

-Blend butter, powdered sugar, and butter together.

-Slowly add in your goat milk until you’ve reached your desired consistency.

-Pour icing on top of cooled bars and spread evenly.

-You can add sprinkles or food coloring to the frosting for any occasion!

-Slice and ENJOY!

Brownies with Summerhill Goat Milk

These brownies make for a warm and decadent dessert! Eat warm and gooey for the most delicious results.

Ingredients

  •  1 1/2 sticks unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup Summerhill Goat Milk
  • 1/2 cup cocoa powder
  • 1 cup all purpose flour
  • 1/4 tsp salt
  • 1 cup semi sweet or milk chocolate chips

How to Make It

-Preheat oven to 350 degrees and line an 8×8 or 9×9 with parchment paper and spray with non-stick spray.

-Cream together butter and sugar until light and fluffy.

-Add eggs and vanilla and mix until combined.

-In a separate bowl mix together the flour, cocoa, and salt.

-Slowly add the dry ingredients and alternate with the goat milk, until combined.

-Stir in 3/4 cups of the chocolate chips.

-Pour batter in your prepared baking dish and sprinkle the remaining chocolate chips on top. 

 

-Bake for 25 minutes or until the toothpick comes out clean.

Lemon Loaf with Summerhill Goat Milk

The perfect pairing with your morning coffee or cup of tea, this zesty lemon loaf cake is bursting with flavor – and Summerhill Goat Milk!

Ingredients for Loaf

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 cup butter, softened
  • -Tbsp. lemon zest
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp. vanilla
  • 1/2 cup Summerhill Goat milk, +1 tsp. lemon juice (let set for 2 minutes to let curdle)

Ingredients for Syrup

  • 3 Tbsp. powdered sugar
  • 1 Tbsp. lemon juice

Ingredients for Icing

  • 1 1/2 cup powdered sugar
  • 1 Tbsp. Summerhill Goat Milk
  • 1/2 tsp. vanilla
  • 1 Tbsp. lemon juice

 

How to Make It

 

-Preheat oven to 350 degrees. Grease a 9×5 loaf pan.

-In a medium bowl mix together flour, baking powder. and lemon zest. Set aside.

-In a stand mixer, cream together the butter and sugar together until light and fluffy. (About 5 minutes).

-Slowly add in the eggs, vanilla, and lemon juice. Beat together until just combined.

-With the mixer on low, slowly alternate in the dry ingredients and goat milk until just incorporated.

-Pour batter into a greased loaf pan and bake for 45-50 minutes, or until golden on top and toothpick comes out clean.

-Let the cake sit for 10 minutes, and mix together the lemon syrup and brush on top of the cake. 

-Once the cake cools, mix together the ingredients for the icing (make sure it’s thick and not runny) and pour on top of the cake.

 

-Slice and serve and ENJOY!!

Goat Milk Bread Pudding with Caramel Drizzle

We’ve updated our very first Summerhill recipe by zhuzhing it up with with croissant cubes and pouring a rich caramel drizzle over the top. This decadent dessert is perfect for a family gathering. 

Ingredients for Pudding

  • 2 eggs
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¾ cup white sugar
  • ¼ cup butter, softened
  • 2 cups Summerhill Goat Milk
  • 4 ½ – 5 cups soft bread cubes (Updated recipe uses croissant cubes)

Ingredients for Caramel

  • I stick of butter
  • 3/4 cup brown sugar and white sugar (half and half)
  • 1/2 cup goat milk
  • 1 tsp vanilla
 
 

How to Make It

Step 1

In a large bowl, lightly beat the eggs. Combine the milk and butter; add to the eggs along with sugar, spices, and vanilla. Add croissant cubes and stir gently.

Step 2

Pour into a well-greased 8 x 8 baking dish. Bake at 350° for 40-45 minutes or until a knife inserted 1 inch from the edge comes out clean.

Step 3

Add all caramel ingredients to a saucepan

Step 4

Melt all the ingredients together and then bring to a boil for about 3 minutes. Constantly stirring to keep from sticking to the bottom of the pan.

Step 5

Pour over however much is desired on your bread pudding, and enjoy!
