Pumpkin Spice Latte with Summerhill Goat Milk

Make a homemade pumpkin spice latte in the comfort of your own kitchen with Summerhill Goat Milk! Our goat milk froths very well and is an excellent addition to the fall flavors of pumpkin and cinnamon. 

Ingredients

  • 4 tablespoons canned pumpkin puree
  • 1 cup Summerhill Goat Milk
  • 2 shots espresso or 8 oz brewed coffee
  • 1 tablespoon maple syrup (to sweeten)
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla

How to Make It

-Heat Summerhill Goat Milk in a small saucepan on the stove, stirring occasionally.

-While the milk is warming, grab your favorite mug and mix pumpkin puree, maple syrup, pumpkin pie spice, and vanilla together.

-Brew your coffee/espresso, and stir to combine with pumpkin pie mixture.

-While the milk is hot but NOT boiling, remove from stove and froth the milk. (If you do not have a milk frothing tool, you can also pour the milk into a covered mason jar and shake vigorously until frothed.)

-Pour milk into the mug, and spoon out any remaining foam for the topping of your latte.

-Sprinkle a dash of pumpkin pie spice or cinnamon on top for garnish, and enjoy!

Goat Milk Waffle

Ingredients

  • 2 cups flour
  • 3/4 cup sugar
  • 3 1/2 tsp baking powder
  • 2 large eggs, divided
  • 1 1/2 cups Summerhill Goat Milk
  • 1 cup butter, melted
  • 1 tsp vanilla
  • Cooking Spray or butter for greasing

How to Make It

1. Preheat waffle iron according to manufacturer’s instructions.

2. In a large bow whisk together your dry ingredients; flour, sugar, and baking powder.

3. Separate your egg yolks and whites into two separate bowls.

4. In a medium bowl whisk together your goat milk, egg yolks, melted butter, and vanilla.

5. Pour your wet ingredients into your dry ingredients and mix until just combined. (don’t overmix)

6. Beat your egg whites in a mixer until stiff peaks form.

7. Fold your egg whites into your batter, just until incorporated.

8. Ladle your batter onto your prepared waffle iron, and cook until golden on each side.

9. Top with any of your favorite waffle toppings and ENJOY

Breakfast Bars with Summerhill Goat Milk

Send your kids off to school with these chocolate oat breakfast bars made with Summerhill Goat Milk! This 30 minute recipe is full of hearty ingredients to power you throughout your morning. 

Ingredients

  • 1 cup instant oats
  • 2/3 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 3/4 tsp ground cinnamon
  • 1/8 tsp salt
  • 1 large egg white
  • 1 tsp vanilla
  • 1/4 cup creamy peanut butter
  • 1/4 cup pure maple syrup
  • 1/4 cup mini chocolate chips
  • 5 Tbsp Summerhill Goat Milk

How to Make It

1. Preheat oven to 300°F and coat a 8×8 baking dish with nonstick cooking spray

2. In a medium bowl, whisk together oats, flour, baking powder, cinnamon, and salt.

3. In a small bowl whisk together the egg white and vanilla. Stir in the peanut butter and maple syrup until incorporated, stir in the goat milk. 

4. Add your wet ingredients to your dry ingredients and mix together until just incorporated.

5. Spread your granola mixture into your baking dish and bake for 10-12 minutes. Cool completely to room temperature before slicing into squares. Store in a sealed container in the fridge or freezer.

Protein-powered egg bites with Summerhill Goat Milk

Are you looking for ways to meal-prep large breakfast recipes! Try our egg muffin bites made with Summerhill Goat Milk! These savory egg bites can be eaten immediately or frozen to enjoy later and are the perfect breakfast for a busy day on the go. 

Ingredients

  •  9 large eggs
  • 6 Tbsp Summerhill Goat Milk
  • 3/4 cup frozen hash browns
  • 1 cup ground sausage
  • 1 cup white onion, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup goat cheese or shredded cheese of choice
  • 1 tsp salt
  • 1 tsp pepper
 
 
 
 
 
 
 
 

How to Make It

1. Preheat the oven to 350°F and spray a muffin tin with non-stick spray. 

2. Place about 1 Tbsp of hash browns in the bottom of each muffin tin.

3.Brown your sausage on the stove until fully cooked. Remove the sausage and pour in the chopped onions and cook until tender.

4. Take a large mixing bowl and mix together your eggs and goat milk. Add in all the rest of your ingredients and mix together.

5. Spoon your egg mixture over top of the hash browns in the muffin tin about 3/4 full.

6. Bake for 20 minutes until the edges have a nice golden brown.

 

7. Eat fresh or freeze once cooled and reheat in the mornings for an easy breakfast to go!

Frosted Lemon Rolls

We recreated Ginny Dyer’s Lemon Rolls using our Summerhill Goat Milk. This recipe is the perfect recipe for spring with its bright lemon flavor! 

Ingredients for the Lemon Rolls

  • 1 ¼ cups (300 ml) whole milk
  • 2 ¼ teaspoon active dry yeast
  • 1 teaspoon granulated white sugar (to bloom the yeast)
  • 4 ¾ cups (593 g) all-purpose flour, spooned and leveled
  • 1 ½ teaspoon salt
  • 2 tablespoon (25 g) granulated white sugar
  • 2 eggs, whisked
  • ½ cup (112 g) unsalted butter, very softened
  • ½ tablespoon vanilla
  • 2 tablespoon (20 g) lemon zest (about 2 lemons zested)

Ingredients for the Lemon Filling

  • ½ cup (112 g) unsalted butter, very softened
  • ½ cup (110 g) brown sugar
  • ½ cup (100 g) granulated white sugar
  • 2 tablespoon (20 g) lemon zest (about 2 lemons zested)
  • 2 tablespoon (30 ml) fresh lemon juice
  • ¼ teaspoon salt
  • ¼ cup (60 ml) heavy cream (for pouring in between the rolls)

Ingredients for the Lemon Cream Cheese Frosting

  • ¼ cup (56 g) unsalted butter, softened
  • 4 oz (113 g) cream cheese, cold
  • ¾ cup (97 g) powdered sugar
  • ½ tablespoon (5 g) lemon zest (about ½ lemon zested)
  • ½ tablespoon fresh lemon juice
