Pumpkin Spice Latte with Goat Milk

Ingredients for Cookie
- 2 Eggs
- 1 tbsp. Maple Syrup
- 2 cups Oats
- 3/4 tsp. Baking Soda
- 1 cup Brown Sugar, packed
- 1/2 cup Granulated Sugar
- 2 Cups Flour
- 1 1/2 tsp. Cinnamon
- 1 tsp. Vanilla
- 1 Cup Butter, softened
Ingredients for Icing
- 3 tbsp. Summerhill Goat Milk
- 1 1/2 cups Powdered Sugar
- 1 tbsp. Maple Syrup
How to Make It
Cookies
- Preheat oven to 350 Degrees; line baking sheet with parchment paper.
- Mix butter and sugars on medium high until light and fluffy.
- Add eggs one at a time, just until combined.
- Add maple syrup and vanilla.
- Mix all dry ingredients, and add them to batter slowly until just combined.
- Roll cookie dough into 1 – 1 1/2 inch balls and place on cookie sheet.
- Bake for 11-13 minutes, and let cool completely before icing.
Icing
- Mix all icing ingredients in a shallow bowl.
- Dip the top of the cookies into the Icing.
- Let cool and ENJOY!
